20-Minute Cinnamon Roll Bites

Cinnamon rolls made in just 20 minutes, with every bite packed with that soft, buttery cinnamon-roll center. 🍥🤎 These little cinnamon roll bites are quick, cozy, and perfect when you're craving something sweet without waiting for yeast dough to rise.

They’re lightly golden on the outside, soft and pillowy inside, coated in cinnamon sugar, and finished with a creamy vanilla bean glaze.

Time & Servings

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Serves: 2–3

Ingredients

For the Dough

- 1 cup (130 g) all-purpose flour

- 1 tsp baking powder

- ¼ tsp salt

- 1 tsp cinnamon

- ⅓ cup (80 ml) milk, or half milk and half heavy cream

- 1 tsp vanilla extract

- 1 tbsp melted butter

For the Cinnamon Sugar Coating

- 1 tbsp melted butter

- 3 tbsp sugar

- 1–2 tsp cinnamon

For the Vanilla Bean Glaze

- 4 tbsp powdered sugar

- 2 tsp heavy cream

- ½ tsp vanilla extract

- Vanilla bean or vanilla bean paste

How to Make 20-Minute Cinnamon Roll Bites

1. Prepare the Oven

Preheat your oven to 375°F (190°C).

Grease your baking pan or line it with parchment paper.

2. Mix the Dry Ingredients

In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.

3. Prepare the Wet Ingredients

Warm the milk slightly.

Mix the warm milk with the vanilla extract and melted butter.

4. Make the Dough

Pour the wet ingredients into the dry ingredients.

Mix gently until a soft dough forms.

Don't overmix. Stop as soon as the dough comes together.

5. Shape the Dough

Lightly flour your work surface.

Roll the dough into a log, flatten it slightly, and cut it into 20 even pieces.

6. Coat the Dough Bites

Dip each piece into the melted butter.

Then coat each piece completely in the cinnamon-sugar mixture.

7. Arrange in the Pan

Place the coated dough bites in your prepared pan in a single layer.

Leave a little space between each piece and make sure not to stack them.

8. Bake

Bake for 9–10 minutes, or until the bites are lightly golden.

Be careful not to overbake them, as this can make them less soft and pillowy.

9. Make the Vanilla Bean Glaze

While the cinnamon roll bites are baking, whisk together the powdered sugar, heavy cream, vanilla, and vanilla bean or vanilla bean paste.

Mix until smooth.

Adjust the consistency with a little more cream or powdered sugar if needed.

10. Glaze and Serve

Allow the cinnamon roll bites to cool for 1–2 minutes.

While they're still warm, drizzle the vanilla bean glaze generously over the top.

Serve immediately and enjoy! 🍥✨

Pro Tip

The most important step is not overmixing the dough.

Mix only until the ingredients come together. Overmixing can develop too much gluten, resulting in dense cinnamon roll bites instead of the soft, pillowy texture you're looking for.

Why You'll Love These Cinnamon Roll Bites

These quick cinnamon roll bites give you all the cozy cinnamon-sugar flavor of a classic cinnamon roll without the long proofing or rising time.

They're perfect for a quick breakfast, afternoon treat, cozy dessert, or whenever a cinnamon craving strikes. And because they're ready in just 20 minutes, you don't have to plan ahead. 🤎✨
